I think I might have a teeny tiny problem. Once I started making popcorn bowls at home, I haven’t been able to stop. I’m not talking about your average bowl of popcorn – I mean magical popcorn bowls like the ones you can get at the Confectionery on Main Street USA. THOSE popcorn bowls. My latest indulgent creation would be the Peanut Butter and Chocolate Caramel Popcorn Bowl!

Let me get you into the mood. Picture sweet, buttery caramel corn that was baked to perfection with a gentle crunch to it. Now imagine it layered with Reese’s Pieces, mini peanut butter cups, melted semi-sweet chocolate, and smooth peanut butter drizzle. Your eyes boinged out didn’t they? I promise you it is HEAVENLY!

Popcorn bowls are the perfect movie night snack. When I can’t be at Walt Disney World, I will put on a Disney movie, whip up whatever popcorn bowl I’m into on any given week, and try to enjoy and embrace the magic from my living room.

Suggestions and Tips for the Ultimate Popcorn Bowl

As I mention in the recipe, you can use any popcorn that you like – buy it already popped, get some microwave pouches or pop some kernels on the stove top. My preferred method is in a good old-fashioned popper (just like when I was a kid!). If you are interested, here is the one that I use: Orville Redenbacher’s Hot Air Popper. I love watching the kernels start to pop and see that delicious cloud of popcorn rise to the top and spill over into the bowl!

I love GIANT popcorn, so I used the Popsecret Jumbo Popcorn Kernels. Finding them in my local grocery store proved to be difficult, so I purchased the jar on Amazon. (As an Amazon Associate I make a small commission on qualifying purchases.)

Heavenly Peanut Butter and Chocolate Caramel Popcorn Bowl

This decadent caramel popcorn bowl featuring Reese's Pieces, mini peanut butter cups and peanut butter and chocolate drizzle is the PERFECT movie night treat!

Ingredients
  

  • 8 cups popped popcorn a heaping 1/4 cup of Jumbo kernels makes approximately 8 cups when popped
  • salt salt the popcorn to taste
  • assorted peanut butter candies I used Reese's Pieces and mini peanut butter cups
  • 1/2 cup peanut butter
  • 1/2 cup semi-sweet chocolate chips
Caramel Coating
  • 3 tbsp light corn syrup
  • 6 tbsp unsalted butter
  • ¾ cup packed brown sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ½ tsp vanilla extract

Method
 

The Popcorn
  1. Pop the popcorn (use a popper, microwave it, buy it….it's up to you!)
  2. Salt the popcorn to taste.
The Caramel Coating
  1. Preheat the oven to 250°.
  2. In a small saucepan, melt the butter over medium heat.
  3. Stir in the brown sugar, corn syrup and salt. Continue stirring until mixture begins to bubble.
  4. Stir frequently for approximately 3 minutes, until the caramel is smooth and slightly thickened.
  5. Remove from heat. Stir in baking soda and vanilla. (Don't worry if it foams a little bit!)
  6. Immediately pour the caramel over the popcorn and stir until it is evenly coated.
  7. Spread the popcorn in an even layer on a parchment covered baking sheet and bake for 45 minutes, stirring every 15 minutes.
  8. Remove from oven and stir one last time to prevent large clusters of caramel corn (small ones are great!). Let the caramel corn cool completely.
Prepare the Drizzles
  1. Put the peanut butter in a microwave-safe bowl. Microwave for approximately 30 seconds. Stir. The peanut butter should be smooth and pourable.
  2. Put the semi-sweet chocolate chips into a microwave-safe bowl. Microwave in 30 second intervals, stirring in between, until it is smooth and pourable.
Assemble the Bowl
  1. Put 1 cup of caramel corn in each of 4 bowls. (Use bowls that will hold 3-4 cups each so there will be room for all the fixings.)
  2. With a spoon, drizzle several tablespoons of both the melted peanut butter and semi-sweet chocolate chips on top of the caramel corn.
  3. Sprinkle the candies (I used Reese's Pieces and mini peanut butter cups) on top of the drizzles.
  4. Repeat the last 3 steps to create another layer of caramel corn, drizzles, and candy. Let it hang out for just a bit until the drizzles set. You don't HAVE to but it WILL be a bit more messy to eat! Throw on a movie and enjoy your popcorn bowl!
