Disney-Inspired Breakfast Toast (Eggs in the basket)

Last Saturday when I woke up and realized once again that I wasn’t at Walt Disney World (rude, right?), I thought I’d at least make something magical looking for breakfast. I had purchased some nice thick Texas Toast bread that I was planning on using for French Toast, but on this particular morning I was craving something a little bit more savory…So, I took a classic that I’ve made hundreds of times (eh, okay maybe tens of times?) and gave it a Disney twist. Introducing: Mickey Mouse Breakfast Toast with Eggs! This idea is a spin on toad in the hole or eggs in a basket. Which one do you call it?

What is Toad in the Hole?

If you’ve never made this delightful breakfast dish, it’s a simple and cozy meal where an egg is cooked in the center of a slice of toast. But today, I made mine with a magical upgrade: instead of a plain old circular hole, I used a Mickey Mouse cookie cutter to make the hole. Genius!

How I Made Mickey Mouse Breakfast Toast with Eggs:

1. I started with thick slices of bread — the Texas Toast worked great but use your favorite!

2. I used a Mickey Mouse cookie cutter to cut a hole right in the center of each slice.

3. Both sides of the bread (and Mickey cut-outs) should be buttered. I placed them on a foil-lined baking sheet (parchment would work, too!) I always spray the foil with non-stick cooking spray just to be extra safe!

4. They were baked at 375 degrees for 4-5 minutes (until lightly toasted on the bottom).

5. Then I flipped them over and cracked an egg into each of the Mickey holes. Back into the oven they went for approximately 7 minutes. Both sides were nicely toasted at this point and the egg was cooked with a soft, partially runny yolk. (Baking time can totally vary based on how dark you like your bread toasted and how you like your egg cooked.)
