Imagine that you’ve just walked into Hollywood Studios in WDW through that fantastic retro-style entrance. Take a left around Echo Lake, wave to Gertie (ALWAYS say hey to Gertie – she’s a special-o-saurus) and look just up on your left where you will find Epic Eats. POV – you aren’t quite ready for lunch but you need a little snacky-snack before heading into the Indiana Jones Stunt Spectacular. This is where the Apple Pie Funnel Cakes come in! They are fluffy and sweet with just enough vanilla ice cream to make you momentarily forget about that scorching Florida sun.

This funnel cake recipe is seriously the easiest thing to make! You don’t have to wait until you get to a fair or theme park – when something is this simple you can make them at home anytime you want! What’s the hack? It is good old Bisquick! That stuff can do just about anything, but who would have thought to use it for funnel cakes?

Years ago I was gifted a funnel cake kit that you can still get on Amazon. I still use that nifty pitcher that came with it when I make funnel cakes. You certainly don’t have to, though. You can even use a regular kitchen funnel with your finger to block the hole off. Once I ran out of the mix that came in the kit I switched to Bisquick and never looked back LOL! It also comes with a fry ring to help keep the shape of your funnel cake but quite honestly I wing that too. I like them imperfect – they each have their own personality. Theme Park-Inspired Apple Pie Funnel Cakes

This Apple Pie Funnel Cake is a fun twist on a fairground classic, inspired by the flavors of a popular treat at Hollywood Studios! Made with a quick Bisquick batter, topped with warm apple pie filling, a scoop of vanilla ice cream, and drizzled with caramel sauce – it's an easy dessert that brings home the magic.

Ingredients
  

  • 2 cups Bisquick mix
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 3/4 cup milk add more if needed for a pourable batter
  • Oil for frying
  • 1 can apple pie filling (pour into a bowl and microwave until warm)
  • vanilla ice cream
  • caramel ice cream topping

Method
 

  1. In a medium bowl, combine Bisquick mix and sugar.
  2. In a small bowl whisk the eggs, vanilla, and milk.
  3. Add the egg mixture into the medium bowl of dry ingredients and mix until smooth. The batter should flow easily but still hold some shape.
  4. Heat 1-2" of oil in a large skillet to 350°-375°. (Pour a small amount of batter as a tester – you will see the edges of the batter bubble rapidly when the oil is ready.)
  5. Pour the batter into the hot oil using a squeeze bottle, piping bag, or funnel cake pitcher. (I prefer to circle around a few times then zig zag in both directions.). Use about 1/6 of the batter per cake.
  6. Fry for 1-3 minutes per side until the funnel cake is golden brown.
  7. Drain the cakes on paper towels. Sprinkle with powdered sugar. Spoon some of the warmed apple pie filling on top. Then place a scoop of vanilla ice cream and drizzle with caramel sauce. Enjoy!

Funnel Cakes For Later

While I do tend to make more Apple Pie Funnel Cakes than I need in the moment, they are at their best served warm right after frying. But, if you reheat the leftover ones in a toaster oven, they are still pretty amazing! Just keep then in an airtight container for up to a few days until you are ready for more!
