Magical Christmas Confetti Cookies Are Sprinkled To Perfection

Sometimes a girl just wants a nice homemade cookie without having to mess around with frosting and complicated recipes. Sometimes a girl also wants a whimsical Disney-Inspired Christmas cookie to celebrate Christmas in July. That girl is me. I am she. These Disney-Inspired Magical Christmas Confetti Cookies fit the bill. They are sweet & buttery and so festive! (You can make them any time of the year with different colored sprinkles!)

Exceptional, Magical, Whimsical Christmas Treats
A few years back I had the amazing experience of being in Walt Disney World right before Christmas. If you’ve been there around the holidays, you know what I mean when I say it is quite a spectacle. The parks get a major makeover – everywhere you look there are Christmas decorations, holiday merch, festive events, and seasonal treats! I remember doing my research before the trip and the one thing that I HAD to have was the Mickey-shaped gigantic cinnamon roll with the red and green frosting. I did indeed get one. It was delicious. I have no regrets. The middle was so soft, warm, and squishy just as it should be.
If you ever have the opportunity to visit in November or December, I promise you won’t regret it. If you can’t make that happen – just do what I do when I can’t get away. I create as many Disney-inspired recipes that I can at home just to bring a little bit of magic into everyday life.

Choose Your Sprinkles
For this particular cookie I used a sprinkle mix that looks like holly and berries. It is basically just green jimmies with small, red, nonpareil-like balls mixed in. The “berries” definitely keep a little bit of their crunch after the cookie bakes which is something I really like. If you don’t like that crunchy texture in your cookie go for just straight jimmies – you can easily find a red and green OR even red, green, and white mixture that would work great in this recipe. When making these cookies for “regular Christmas” (you know, in December LOL) holiday jimmies are in all of the stores. If you are making them for Christmas in July, you might have to order the jimmies online if you don’t have any hanging out in the back of the cupboard from last Christmas. If you are anything like me you may have a tiny bit of many different kinds of holiday sprinkles in a number different bottles. I’ve been to known to throw them all together in a cookie dough or even sprinkled on top of ice cream. I am a rebel like that sometimes.

Disney-Inspired Christmas Confetti Cookies
Ingredients
Method
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and sugar.
- To the sugar and butter mixture, add the vanilla, milk, and eggs. Mix until thoroughly combined.
- Slowly incorporate the flour mixture into the wet ingredients. Stir until a nice, smooth dough forms.
- Add the sprinkles to the dough and gently fold them in until dispersed evenly.
- Take approximately half of the dough, gently shape it into a flattened ball onto a lightly floured surface.
- With a lightly floured rolling pin, roll out the dough to approximately 1/4" thick.
- With your Mickey-shaped cookie cutter, start cutting shapes from the dough. (Dip the cutter in flour then tap off the excess before cutting the dough.)
- Using a metal cookie spatula (again, dip it in flour and tap off the excess) gently lift up the Mickey shapes and place on a non-stick cookie sheet approximately 1" apart.
- Roll the remaining dough that you just cut out of back up into a ball, roll it out again, repeat the cutting process.
- Repeat the last 4 steps with the remaining half of dough.
- Bake cookies at 425°n for 5-7 minutes. Use the metal cookie spatula to peek underneath the cookies – once they start to get a little bit of color they are done.
- Transfer cookies to a wire rack and cool completely.
- Enjoy! Store in airtight container for 3-4 days. These freeze really well so don't be afraid to make extra!
