A few years back when visiting Walt Disney World, I purchased a small container of cheesy crackers shaped like tiny Mickeys. This was the last day of our trip and I munched on those little crackers during the 15+ hour drive home. (I cried in them a little too, because, you know, leaving Disney…) Anyway, I think about those little cheese crackers often. So, when I got a set of Mickey-shaped cookie cutters that came with a very small cutter, I knew exactly what I was going to make first! Allow me to share with you my Mickey-shaped Cheese Cracker Recipe!

If you do not yet have Mickey-shaped cookie cutters, let me recommend my favorite ones to you! A block of cheese that you shred yourself is 100% better than the pre-shredded stuff. I said what I said. Do I keep a bag of the already-shredded cheese in my fridge for emergencies? Do I use it on tacos? Yes and yes. But for actual recipes I buy the chunk and shred it myself. If you haven’t done a comparison, here is your sign to try it. What is the best way to shred the cheese you may ask? Here is how I do it every time…I still use a Salad Shooter! You don’t hear about them like you used to but they are widely available and I LOVE mine! I wouldn’t trade it for anything! (I can still hear the song in the commercial – “Salad Shooter, helps you every day!”) 😆. You can get your very own Salad Shooter on Amazon! It’s not only great for shredding cheese but it also slices – it is perfect for all kinds of vegetables!

Mickey-Shaped Cheese Crackers

This adorable, savory, Mickey-shaped treat will bring a little Disney-inspired magic to snack time!

Ingredients
  

  • 8 oz sharp cheddar cheese (finely shredded)
  • 4 tbsp unsalted butter (cold and cubed)
  • 1 cup flour
  • ¾ tsp salt
  • 2-3 tbsp cold water
  • ½ tsp paprika
  • sea salt (for sprinkling on top)

Method
 

  1. In a food processor (or using a handheld pastry blender), pulse the cheese, butter, flour, salt, and paprika until crumbly.
  2. Add water (1 tbsp at a time), pulsing until dough just comes together.
  3. Shape dough into a disk, wrap with plastic wrap, and chill in the refrigerator at least 30 minutes.
  4. Preheat oven to 375°.
  5. Roll dough on a floured surface to ~1/8" thick. Using a small Mickey-shaped cutter (just over 1" in diameter), cut Mickey shapes out of the dough.
  6. Place the cut outs on a parchment lined baking sheet.
  7. Lightly sprinkle the crackers with sea salt.
  8. Optional: using a toothpick, poke a hole in the center of each cracker to prevent them from puffing up too much while baking.
  9. Bake 12-14 minutes until crisp and golden. (For extra crispiness, add another minute or two!)
  10. Cool completely – they will continue to crisp up!
