In a food processor (or using a handheld pastry blender), pulse the cheese, butter, flour, salt, and paprika until crumbly.
Add water (1 tbsp at a time), pulsing until dough just comes together.
Shape dough into a disk, wrap with plastic wrap, and chill in the refrigerator at least 30 minutes.
Preheat oven to 375°.
Roll dough on a floured surface to ~1/8" thick. Using a small Mickey-shaped cutter (just over 1" in diameter), cut Mickey shapes out of the dough.
Place the cut outs on a parchment lined baking sheet.
Lightly sprinkle the crackers with sea salt.
Optional: using a toothpick, poke a hole in the center of each cracker to prevent them from puffing up too much while baking.
Bake 12-14 minutes until crisp and golden. (For extra crispiness, add another minute or two!)
Cool completely - they will continue to crisp up!
