Whether you are having a night of self-care and watching a movie by yourself, or enjoying a flick with family & friends, Disney-Inspired Apple Nachos are the ideal snack. Hear me out… They are NO BAKE. The toppings are totally customizable. I dare say they are on the “healthier side” since we are starting with fruit. And, these Apple Nachos are the most sweet & salty pile of deliciousness that I’ve had in a long time – I literally cleaned the plate. Could not stop eating. 10/10 stars – highly recommend! This recipe can easily be doubled or tripled for a crowd!

Autumn Vibes

Apple Nachos are truly great any time of the year, but I definitely eat a lot more apples in the fall. My absolute favorite kind are Honeycrisp – they are so sweet. If you’ve been following me at all, you know I have a violent sweet tooth!

Anything caramel-ish also reminds me of autumn. Caramel also makes me want to head over to Caramel-Küche in Epcot but since I’m over 1,100 miles away from that I guess I have to settle for Apple Nachos this weekend….

No Mickey-Shaped Cookie Cutter? No problem!

If you do not yet have a Mickey-shaped cookie cutter in your possession, let me recommend my favorite set! It is this 4 piece Mouse Cookie Cutter Set from Amazon. For this recipe I used the smallest cutter (with the green hand protector.). I just love these particular cutters because they have the hand protectors and that really helps – especially when cutting through denser materials such as apples (or Rice Krispies Treats!)

Disney-Inspired Caramel Apple Nachos

These Disney-Inspired Caramel Apple Nachos are the perfect movie night snack – they're easy, no-bake, and simply delicious!

Ingredients
  

  • 2 medium apples
  • 1 tsp lemon juice
  • 1 cup water
  • ¼ cup caramel topping (store-bought ice cream topping works great!)
  • ¼ cup mini chocolate chips
  • ¼ cup mini marshmallows
  • ¼ cup white chocolate chips
  • 1 pinch sea salt
  • Disney-inspired sprinkles optional

Method
 

Lemon Soak
  1. Mix the lemon juice in water in a medium bowl and set aside.
Prepare the Apples
  1. Wash and dry the apples.
  2. Slice apples into rounds 1/4" thick.
  3. Using a small Mickey-shaped cookie cutter, cut a decorative hole in the center of each slice. (For the inner slices, throw out the shape as it contains seeds/core. For the outer most slices, save the little Mickey-shapes for decoration.) *See "NOTES" below for link to purchase a Mickey-shaped cookie cutter if need be 🙂
  4. As you cut them, place each finished apple slice into the bowl of lemon/water to prevent browning.
Arrange the Nachos
  1. Arrange the apple slices on a platter in overlapping layers.
  2. Slightly warm the caramel topping in the microwave (10-15 seconds) then drizzle over the apples. (It thins out a bit as it warms – this helps it soak into the apples.)
  3. Scatter the mini chocolate chips, marshmallows, and sprinkles on top. (Add whatever you'd like – nuts would work great as well!)
  4. Melt the white chocolate chips in the microwave and drizzle on top of the nachos.
  5. Place the little Mickey-shapes that were cut from the apples on top as a decoration.
  6. Finish it off with a sprinkle of sea salt. Enjoy your masterpiece!
