The Best Autumn Morning
A cozy fleece blanket, hot coffee in my favorite mug, and breakfast with an autumn flair that is shaped like Mickey! Yep, this Mickey-inspired Pumpkin Spice Breakfast Toast is the perfect autumn, Saturday-morning breakfast in my house.
This breakfast that I speak of is technically “toast”, but I make it in a skillet instead of the toaster. The difference in taste is monumental. If you’ve never tried it, you simply must. The best part of this recipe though, is that it is super easy to make! The pumpkin spice mix is already made up and sitting in my cupboard just waiting for its time to shine. Magical Tools That Won’t Break The Bank
If you do not have a Mickey-shaped cookie cutter in your possession just yet, let me recommend the ones that I have. It is a set of 5 assorted sizes and is less than $6 on Amazon. Honestly, what can you get for five bucks and some change these days? Basically nothing. I use these cutters more than any other gadget in my kitchen as of late – almost everything that I serve has some kind of magical touch to it! Truly, they bring some fun to food making and I have zero regrets about finally getting them.

Mickey-Inspired Pumpkin Spice Breakfast Toast
Ingredients
Method
- In a medium skillet, melt 1 tbsp of the butter over medium-low heat.
- While the butter is melting, press a Mickey-shaped cookie cutter into each slice of bread – almost but not all the way through, just enough to leave an impression.
- Using the other tbsp of butter, spread it on both sides of each slice of bread.
- Combine the sugar and pumpkin spice mix, then sprinkle the mixture on both sides of each slice of bread. (I use a small mesh strainer to avoid lumps or uneven coating.)
- Place both slices of bread in the skillet. Cook for 3-4 minutes or until lightly browned on the bottom. Flip and cook an additional 3-4 minutes until browned on the bottom.
