Disney-Inspired Candy Corn Popcorn Bowl

This Disney-Inspired Candy Corn Popcorn Bowl is the PERFECT Halloween movie night snack!

Ingredients
  

  • 8 cups popped popcorn (salted to taste) (a heaping 1/4 cup of Jumbo kernels makes approximately 8 cups popped)
  • 1/2 cup semi-sweet chocolate chips (melted)
  • 6 oz. candy corn
  • sea salt (optional for a final sprinkle on top)
Caramel Coating
  • 3 tbsp light corn syrup
  • 6 tbsp unsalted butter
  • ¾ cup packed brown sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ½ tsp vanilla extract

Method
 

Caramel Corn
  1. Preheat the oven to 250°.
  2. In a small saucepan, melt the butter over medium heat.
  3. Stir in the brown sugar, corn syrup, and salt. Continue stirring until mixture begins to bubble.
  4. Stir frequently for approximately 3 minutes, until the caramel is smooth and slightly thickened.
  5. Remove from heat. Stir in baking soda and vanilla. (It will foam a little bit.)
  6. Immediately pour the caramel over the 8 cups of popcorn and stir until evenly coated.
  7. Spread the popcorn in an even layer on a parchment covered baking sheet and bake for 45 minutes, stirring every 15 minutes.
  8. Remove from oven and stir one last time to separate any large clusters. Let it cool completely.
Assemble the Bowl
  1. Put 1 cup of caramel corn in each of 4 bowls. (Be sure to use bowls that will hold 3-4 cups so there there is room for all of the fixings!)
  2. Sprinkle some candy corn on top of the caramel corn. (Approximately 12 pieces.)
  3. With a spoon, drizzle several tablespoons of melted chocolate over the caramel corn in the bowl. (If the melted chocolate is too thick, you can add a tiny amount of vegetable or canola oil to thin it out - that will also make it shinier!)
  4. Repeat the last 3 steps to create another layer of caramel corn, chocolate, and candy corn.
  5. If desired, sprinkle a little bit of sea salt on the very top. Let it rest for just a bit so the chocolate can set. Enjoy your movie and popcorn bowl!
