Stir the boiling water into the dry gelatin mix until completely dissolved. (Use a toothpick to pop any bubbles if needed.)
Pour into a 8x8 pan that has been lightly sprayed with non-stick cooking spray.
Refrigerate several hours until firm.
Using a Mickey-shaped cookie cutter, gently cut shapes out of the gelatin.
Carefully remove the shapes from the pan with a turner spatula.
Store in an airtight container in the refrigerator.
